Protein Muffins = Breakfast Obsession
Mornings can be a mad rush, can’t they?
Whether you're trying to wrangle kids, get to work, or just sneak in a moment of peace before the day starts—breakfast can easily become an afterthought. But skipping it (or grabbing something sugary) usually means one thing: you're starving by 10am.
Enter: Lemon Blueberry Protein Muffins. Easy to prep ahead. Packed with protein. Naturally sweetened. And so good.
🍋 Lemon Blueberry Protein Muffins (Makes 12)
Ingredients
2 cups almond flour
½ cup vanilla protein powder (use your fave)
1 tsp baking soda
½ tsp salt
Zest of 1 lemon
3 eggs
¼ cup honey or maple syrup
⅓ cup unsweetened applesauce
1 tsp vanilla extract
1 cup fresh or frozen blueberries
Method:
1️⃣ Preheat oven to 175°C (350°F) and line a muffin tray.
2️⃣ In one bowl, mix almond flour, protein powder, baking soda, salt, and lemon zest.
3️⃣ In another, whisk eggs, honey/maple syrup, applesauce, and vanilla.
4️⃣ Combine both bowls, mix gently, and fold in blueberries.
5️⃣ Spoon into muffin cups and bake for 18–22 minutes (check with a toothpick).
6️⃣ Cool slightly and enjoy!
